The chopping pot is driven by a motor at low speed through a reducer, continuously feeding the material to the blade assembly. The blade shaft is driven by a dual-speed motor (or variable frequency motor) via a belt to rotate at high speed. As the material spirals in the chopping pot, it is stirred and chopped by the blade assembly, removing air from the minced meat. The high-speed chopping action of the blades reduces liquid separation, ensures emulsification, and enhances the elasticity and smoothness of the product.
